Very Naughty Almond Shortbread Waffles


Umm, these are only naughty because they taste like cookies.
Cookies for breakfast, oh yeah!
All's I can say is, that you'd better get some exercise if you are going to eat these for breakfast!

You could skip the almond meal in this recipe and just use 1 3/4 cup of flour instead, but the almond flour gives it a great taste and texture.  It's very easy to make almond flour in your blender, or food processor.  These waffles freeze well and reheat beautifully in the toaster, just pop them in the toaster.  You can make people very happy by having these in the freezer for a fast breakfast, but most likely they will eat them all up before you have a chance to.



Serves 4-5
Ingredients:
1 1/2 cups all-purpose flour
1/4 cup almond meal
1 cup sugar
4 large eggs
1 cup butter, at room temperature
1 tsp almond extract
1/4 cup almonds, thinly sliced and toasted



FYI, about 3/4 cup of whole almonds makes about 1 cup of almond flour.  It should keep in a airtight container or ziploc bag for future recipes.  You can add to muffins, cookies and almost any other baked good in a 1:1 ration with flour.


Blend in your processor until you get a fine meal... it sounds like your are blending rocks at first, so don't worry too much, just keep blending!



In a stand mixer,
Beat the sugar and butter together, then add the eggs, one by one. In a separate bowl, mix together the dry ingredients;  the flour (sift if you like to, I never do...), the almond flour and sliced almonds. Slowly add to the mixer without making a mess, or over beating the mixture.


The mixture will be thick, you may even need an ice cream scoop to get onto the waffle iron.


Cook until golden about 3 minutes on my waffle maker which is a pretty thick one, so yours might take less time.

Serve with real maple syrup, or melted butter and a sprinkling of powdered sugar... or even fresh sliced strawberries. 

You'd better serve it with bacon, otherwise you will rush into a sugar coma and it will be your own fault.  Just sayin'...

Hey, you know what?  If you don't have any real Maple Syrup around, have you ever tried making brown sugar syrup?  It tastes way better than that awful 'fake' syrups you can buy.  Try it!

1 cup brown sugar
1/2 cup water
1 tsp vanilla
1 Tbsp butter, cold

Melt up the brown sugar, water and the vanilla and cook for about 5 minutes on medium heat.  When ready to serve, stir in the cold butter and serve.  The cold butter gives it a bit more thickness and flavor.
