Portugese Linguica, Bean & Kale Stew


July 16th is kind of a weird day to post a hearty, cozy meal like Linguica, Beans and Kale.  BUT, it's raining and about 60 degrees here.  Yeah, in July!  I know that much of the nation has been having a heat wave...

I originally made this dish in June before our 'so called Summer' started, but I thought I would wait to post it in the Fall.... or not...

This whole dinner took about 25 minutes to make, not too bad for a fast and nutritious dinner that tastes great too.  Watch it with the seasonings, don't make the stew too spicy without tasting the cooked linguica, it's a bit spicier that you think!


Serves about 4-5
Ingredients:
1 onion, chopped
4-5 garlic cloves, minced
2 Tbsp olive oil

4-5 white potatoes, large chunks
1 lb. linguica sausage
4-5 cups chicken broth
1 can white beans and their liquid
1 can diced tomatoes and their liquid
1 bay leaf
1 tsp smoked paprika
fresh pepper
1 large bunch of kale, chopped

Saute the onions in the olive oil over medium heat until they are starting to soften and get a little color.  Add the garlic and cook another 1-2 minutes.  Add the sliced linguica sausage and cook about 3 minutes. 


Add the cans of tomatoes and the white beans, including their liquid.  Add the chicken stock (start with 4 cups and see if you want more) and the potatoes and cook over until the potatoes are fork tender, about 15 minutes. Add the chopped kale and stir in until it softens.  Ladle into bowls and serve.
Cheese is nice on the top, if you like.
